VSS save sets depend
  - on the NW version
  - on the client's Windows version

You are correct that the VSS save sets changed with NW 8. If you click on the 
folder icon next to the client's save set list, you will see which ones are 
available for you combination. 
Of course you should not try to backup save sets which do not exist.
