Maybe I'm missing something, but I think you're over complicating
things. In that scenario, I would do a full back of the old server
(ZEUS), and then swap hostnames (so that the new server would still be
ZEUS - if you like you can put the old-ZEUS machine on ARES,) and then
do another full backup. If you need files from the old setup, you can
either copy them over from ARES/old-ZEUS, or do a restore directly back
to the new machine.
Deleting the client seems like overkill.
