I get this when I try mounting it after I changed the tape to /dev/nst0

looks like your Ultrium uses /dev/st0 so try /dev/nst0 in your conf
file. nst0 is
the same as st0 except it does not rewind.

in recent versions of bacula, you set it in
mtx-changer.conf
in older versions you set it directly in the script
(in your case /etc/bacula/scripts/mtx-changer)
