Kinda out of idea now ^^ knowledge out, except for one last thing, but 
since you are able to check the shares it shouldn't be it. Have you tried 
deactivating the firewall on the windows 2008 server for all networks 
?(Pro / Home / Public) ?

I actually had all the firewalls on, so turned them off (no need for them, it's 
a VM).

Unfortunately, it didn't solve the issue. Still backs up 3 files then stops.

I am hoping the issue is confined to the one Windows 2008 server only, will 
create a new one and test it.
