Found from looking right through a very extensive log at level 6 that a lot of 
files (66,000 of a total of 75,000 which was a total of only 100MB of the total 
7.5GB) were located in a temp folder. I thought I had filtered them all out 
with my exclude files but obviously I missed this one 
(Users/[Username]/Local/Temp. I think that for what ever reason it would fail 
on one of these files and just hang in limbo for a long time and often then not 
wake back up.

I have added the filter for this directory and a incremental backup for the 
past two days has taken 20 and 23 minutes respectively. Will wait and see how a 
full backup goes when it is due but suspect that this may have been the cause 
of the problems. 

Thanks to all for your assistance with this. Now to leave it for a while to 
make sure everything is running smoothly then I will try and tweak backup 
rotations, email etc.
