I assume that these machines are outside your network. If so, I'd recommend setting up VPN tunnel connections for Amanda to run over. We use OpenVPN, it works quite well. Then, you can lock down the Amanda ports so nothing but the machine(s) on the other side of the encrypted tunnel can access them.
