The manpage talks about it. See "file" in the section OUTPUT DRIVERS
typing man amanda.

I have a server configured like this. So I put the backups in
/dumps/backup. There I have the directories: Daily-11, Daily-12 ...

And there is a link to the current directory:

I have made a script that rotates to the next dir changing
the link.
