Doesn't backing up the catalog into a Bacula Pool of volumes defeat the purpose as it would be inconvenient to retrieve the catalog in the case of failure?
Yes, it certainly could be. You'll notice the default RunAfter job for the catalog backup just deletes the resulting db dump after it has been backed up. An easy change is to replace it with your own RunAfter script that copies that db dump and your various other files (configs, bootstraps, whatever will simplify a rebuild) away to another host. Offsite, preferably.
