How? In my experience it's one Job - one Fileset. If you worry about 
different versions of one fileset, it's further defined in the job 
report by it's timestamp.

If you want to work with different versions of one fileset, I tend to

   Eg. Say a saveset is of 120 GB, job fails for some reason or is cancelled after 90GB of backup.
       Can bacula restart this job to backup from 91st GB onwards? The Volume sessions saved can be used to pickup data from where it left.
    
No. For some merely technical reasons, and for some conceptional ones.
