You can select any number between 0 and the number of your hosts configured.
There is even a checkbox to select all available hosts with one click.

That is because an "archive"-host is not something backuppc schedules
automatically and therefor there is no need to have it in the summary. This
might be questionable, but thats how it is.

BTW: Once you have configured your archive-host, you can schedule automatic
backups (which are actually automatic-tar-write-outs) via cron and the
commandline. We use that here to write (encrypted) tar 'tapes' to a nas on a
weekly basis.
