Now I do a backup from: /data

How can I define multiple jobs, all doing a smaller part of "/data"
and all to gether, will be a full backup of "/data"
Is it possible, to make it dynamic, for instance, multiple jobs, all
backing-up 10 Gb.

First of all, do you use a Bacula virtual backup feature? It should turn your every backup into incremental or differential one.
You can of course manually split your fileset.
