You could use the software raid that is built in to linux. I have 15TB
+ of linux software raid 6 here at work scattered on 8 to 10 servers
and it works very well with any recent hardware. Expect less than 10%
CPU usage for the raid on a 2GHz single core. No special controllers
needed just the kernel driver and mdadm.

Yes you can do this. You need 2 different storage devices and if you
want to do simultaneous backups you need to enable concurrency.
