That depends... you can check if the daemons are running (ps-like), 
that they accept network connections (but that clutters your logs 
unless you really log in), that jobs are executed (query the catalog, 
or use bconsole scripted).

What I'm doing is, using Nagios:
- check daemons are available with check_bacula
- use passive checks which are sent with a run after job script to the 
nagios server.

Thus I see if the essential daemons are avilable, and get notified if 
jobs are failing or aren't executed in time.
