With different shares inside one host you could probably reduce the
memory-problem. But you can't distribute the load of full backup over
several days.
When you define your backup hosts/resource from some automated system
(like we do via chef), it should be pretty easy to define one
backup-host per user. And maybe one host for each domains shared
folders, if you have that.
