The actual hostname is set in /etc/sysconfig/network.

RHEL/Centos put this under /etc/mail - and normally you would edit the
much simpler sendmail.mc file, setting MASQUERADE_AS if you want it to
pretend to be some other host.

Is this from the EPEL rpm version?

That seems likely to break things.
