Note that only backing up the pool/ and cpool/ directories won't allow
you to restore anything - you end up with just a lot of files with MD5
filenames and no information where they came from. You need to backup
the pc/ directories as well, so making a snapshot of the whole backuppc
file system might be the easiest and fastest way because
a) tar would need loads of memory to keep track of all the hardlinks
b) you use tar for pool/cpool (and disable hardlink handling to save
memory since it will see each file only once), then use 
BackupPC_tarPCCopy to create special tar archives for the pc/
directories which contain hardlink references only. Only traversing all
these backups will require a lot of time because of heavy disk seeking.
