What version of gnu tar are you using?
Check /tmp/amanda/sendbackup* logs on the client for errors.

The server receives about 231M of 3G, then fails. There's nothing
in the dump disk.

I've never used the gtar feature.  Anyone have a heads up as
to what I'm doing wrong?

Both the server and client are running amanda-2.5.0b1-20051205
(server on RH9, client in RHEL ES 4). I have no problem with
the dump section in this configuration.
