I tried this:

[root@raid-backup test]# restore -ivf pst._pst.20060205.2
Verify tape and initialize maps
Input is from a local file/pipe
Input block size is 32
Dump date: Sun Feb 5 19:36:58 2006
Dumped from: Wed Feb 1 19:36:28 2006
Level 2 dump of /pst on pstserver.sino.de:/dev/hda2
Label: /pst
Extract directories from tape
Initialize symbol table.
restore > ls
.:
       2 ./
       2 ../
   65537 dir1/
 6045697 dir2/
  851969 dir3/
restore >
restore > add dir1/
Make node ./dir1
restore >
restore > extract
Extract requested files
You have not read any volumes yet.
Unless you know which volume your file(s) are on you should start
with the last volume and work towards the first.
Specify next volume # (none if no more volumes):

Am i not able to extract only the files in the Level 2 Backup? When i say
"none" it extracts the directorys without the files in the directorys?!

An what does he mean when he says "Specify the next Volume"? The amrestored
Level 0 and Level 1 of my Backups? If yes how do i have to specify it? Only
give him the Filename - like pst._pst.20060204.1 or pst._pst.20060203.0

Thanks very much!
