Note your own terminology, "temp" files.
gtar first looks at what has to be backed up then goes to back it up.
Those files were temporarily there, then not.

du reports based on "blocks". Some blocks assigned to files are only
partially full, expecially the last block of a file. gtar outputs in
a continuous stream, so no partial blocks. It report what it wrote.
This does not have to match what the number of blocks it read.
