help with DR procedures for setup w/ TSM, VMware & SAN

Id like some advise on setting up our DR procedures.
Situation.
Aprox 20 Windows 2003 Guests with TSM agents
Running on
4 VMware hosts at v3.5
Attached to
single Fiber SAN (multiple luns)

What I invision for backup and DR is this.

TSM inside Guest OS backing up data on data volumes and DB's (Currenly doing)

VCB server running as a VM Guest where VM host has fiber attachement to volumes on SAN

A script on the VCB server does this:
VCB does image snapshot of specific VM guest
TSM does an incremental that excludes Data Drives
but includes the OS volume
VCB releases and deletes image/snapshot
repeats steps for next VM guest

For DR recovery I would do the following
Restore the image made with VCB to a VM host at DR location
Define VM guest on new host with VM converter.
Define Data volumes with Virtual Center
Restore Data volumes with TSM client. (TSM client is loaded on OS volume)

I've been pouring over various docomentation.
Base on my reading I believe this will work but I have a couple of concerns.
I believe that the full vm snapshot copys all the data to the VCB host.
Several of my servers are between 500 and 800GB.
I'm thinking this will take to long and make the process unusable.
I have not seen a option with vcbmonter that allow
to just do specific volumes like the OS volume

Notes:
TSM is currenly at ver 5.3 but will be at 5.5 very soon.

Does this seem to be a resonable approach?
Is anyone doing this?
Is there a better way?
