Well, if you'd have a zfs pool, then it wouldn't make any sense to have
one or more disks off side all the time. A zfs pool is more like a
software raid. You have i.e. three usb disks and use them to build a
raidz (means raid 5). If one fails or needs to be replaced you still
have your data. Thus you'll have to have two pools. An active one and
another one somewhere at a safe place.
