I don't see any reason you couldn't try it, since this appears to be a
new server.  If there were a problem, you could just remove the files
and start doing whatever you'd do if this didn't work.

I can't confirm that Windows to Unix will work, but my assumption is
that it'll be fine.  I've used it for a server change that also was an
upgrade from 5.1 to 6.0.
