Pretty much what Carsten said below, however adding to it ...

All - will attempt backup all of the file-systems / save-sets that are 
discovered by savefs on the initial probe of the client - this will vary 
depending on the operating system of the client, and the various switches that 
you can use to control a client save process
        In the save operations tab you can specify a whole bunch of black magic 
commands to alter the backup behaviour (I really wish EMC would produce more 
definitive list of what you can and cant do here, and not bury it down on page 
778 or the admin guide) 
                VSS:*=off - turn off all VSS style backups (for all save-sets - 
file-system and system state)
                VSS:{drive|writer}=off - turns off VSS for an individual 
component
                VSS:{*|drive|writer}=only - only use VSS to backup the 
file-system, don't fall back to the legacy method
                VSS:DISASTER_RECOVERY=off  - disable the Disaster Recover 
save-set, and replace it with the VSS System Boot, Fileset, Services and User 
Data save-sets
                VSS:VSS_SYSTEM_SAVESETS=off - disable the VSS system state 
backups from being triggered from and incremental client backup

        the save-sets discovered by the probe will vary depending on the 
operating system of the client
        Win2K8 - all drives (C:\, D:\, etc) , DISASTER RECOVERY:\
        Win2K3 - all drives (C:\, D:\, etc), VSS SYSTEM BOOT:\, VSS SYSTEM 
SERVICES:\, VSS SYSTEM FILESET:\ or if VSS is disabled SYSTEM FILES:\, SYSTEM 
DB:\, SYSTEM STATE:\
        Win2K - all drives (C:\, D:\, etc),  SYSTEM FILES:\, SYSTEM DB:\, 
SYSTEM STATE:\
        Various flavours of Linus / Solaris - all recognized mounted volumes

All-{file-system} - will backup all file-systems for the nominated type, that 
are mounted  - again not sure what the definitive list is but I am pretty sure 
that you can specify NTFS, ZFS, EXT3, LOFS, so for example All-NTFS - will 
attempt to backup all NTFS filesystems discovered by the savefs probe and 
nothing else, you can however specify more than one save-set , ie All-ZFS and 
ALL-EXT3

  All                comprises all save sets (incl. VSS, DISASTER RECOVERY and 
similar)

  All-NTFS       comprises exclusively all NFTS file system volumes
