When I try to delete it from the jukebox's list, I get an error "Incorrect number of values in 'loaded volumes', should be '1'". The "loaded volumes" box is empty.

The trick here is to create a dummy device - any old device, doesn't even have to exist, and switch it with the real device in your jukebox devices list. Then delete and recreate your tape device with the new media type and switch it back. Easier than having to redefine your jukebox.
