On EL, I get the latest RPMs from the Sourceforge repository (follow the 
Downloads link from bacula.org) and install those.

There aren't any repositories that have newer releases that I know about, e.g. 
EPEL has Bacula 2.0.3

On my Bacula server (CentOS 5.2):
# rpm -qa|grep bacula
bacula-mysql-3.0.1-1

That RPM includes the DIR, the SD and the FD:
# rpm -ql bacula-mysql|grep bin
/usr/sbin/bacula
/usr/sbin/bacula-dir
/usr/sbin/bacula-fd
/usr/sbin/bacula-sd
/usr/sbin/bconsole
/usr/sbin/bcopy
/usr/sbin/bextract
/usr/sbin/bls
/usr/sbin/bregex
/usr/sbin/bscan
/usr/sbin/bsmtp
/usr/sbin/btape
/usr/sbin/btraceback
/usr/sbin/bwild
/usr/sbin/dbcheck
