Just mount your NFS filesystem on /var/lib/backuppc. 
You can either do this before installing the BackupPC software; or mount the
NFS filesystem elsewhere, move all the data from /var/lib/backuppc to it,
then mount the NFS filesystem on /var/lib/backuppc.
