Standard answer #1: Amanda doesn't do backups -- amanda schedules them. Bits are actually gotten off the disks by the program you specify in the disklist, generally either GNUtar or a filesystem-specific 'dump' program. The man pages of those utilities will explain in great detail how they determine what to backup and when.

In general, a level 1 backup means everything that has changed since the last level 0. A level 2 means everything that has changed since the last level 1. Etc.
