Keith,
That's what I've done so far. I'm trying to figure out how to get one DC
node/data mover to process one group of VMs while the other processes the VMs
left on a given hosts.

Hi David,
A new management class/copygroup whose destination points to the second pool is
key, to state the obvious.
One way to do this is to create a second data center node in a second policy
domain with its default management class destination pointing to the second
storage pool. Grant proxy from the new data center node to the second set of
data movers. Voila.
There may be a simpler way to do this with include statements on the existing
data center/data mover nodes, but I'm not sure how.
