I guess it should be possible in theory to have file level incremental
backups of Linux and Solaris in VMware, but no solution I know can
actually do it.

With VMware 4, which is about to be released, it will be possible to
make block level incremental backups of your VMDK. Now I know it's not
the same as a fie level incremental. Also I know that StorServer will
by that about time have their VCB agent updated to take advantage of
that possibility (Kelly?).
