Sandra,

You need to find out where the .EDB, .STM, and .LOG files are
being stored for each Exchange storage group and EXCLUDE those
directories. By default, those files are stored under a
directory under:  C:\Program Files\Exchsrvr\<storage-group-name>

However... the files are typically placed into different locations.
You can find out those locations by going to the Exchange System Manager
and doing a "Properties" on the storage group. The "Properties"
will show you the location of the log files and the database files.
