Shared dynamic won't affect the backup of an open PST file because Outlook
opens the file for exclusive use.

You can use the Open File Manager from St. Bernard to back up .pst files.

A useful free add-on from Microsoft reminds the user to back up their
folders periodically. The file pfbackup.exe is available from
http://office.microsoft.com/downloads/2002/pfbackup.aspx. It's a passive
utility that will allow a user to cancel the backup reminder without
performing the backup, so you can't be certain that it's going to happen.
Another downside is that it creates a backup.pst file that is as large as
the original - in fact it's a copy of the folders - with no compression.
