Actually, it's funny you should mention that "you're kind of stuck"....
Because, you're not anymore.

Check out the following website:
http://www.tivoli.com/products/index/decision_support_storage_mgt/

It details TDS for SMA (Tivoli Decision Support for Storage Management
Analysis). It's a really cool utility that helps you A) analyze your
current storage situation, and B) help predict your longer term storage
needs.

While you may think Marketing is putting me up to this, they're not.
TDS/SMA is really that cool of a utility. This version has tons of
questions incorporated, and tons more are being planned for the next
release. I don't have the word on expected release for the next revision
though, so rush out there and test the bandwidth capacity of the Tivoli Web
server.... :-)

You're kind of stuck with analyzing what you're getting from each client
each day and taking a wag at it. Over time, you should be able to get the
sizes configured about right. Why have more than one disk pool? I ask
because it's simpler to have just one. If you don't have a business reason
to have more than one you shouldn't.

We set more than one up when we have a good business reason. Often, the
business reason is faster restores for some nodes so collocation is a good
idea for those systems.

You can probably take a look at your activity log and get the bytes
transferred info from each client and do math. I'm sure an non-SQL
challenged person can give you a neat select statement to determine this
more easily.
