I think I have seen scenarios detailed on this list of both
possibilities working just fine (V. 3 client to V. 2 server, V. 2 client
to V. 3 server).  But once you convert a client from version 2 to
version 3 you cannot go back.  We had to back out on one of our servers
due to an outside incompatibility issue, and basically "lost" the V 3
backups that had been taken in the interim.  (actually we saved them
under a different node name, so nothing was really lost)
