You need to get a 3rd party product such as Seagate Software's Backup
Exec with the Exchange and ADSM modules.  IBM is supposed to be working
on an agent to backup open Exchange files, although I have not heard
when it will be available.  The only other option is to shut down the
Exchange services, do the backup, then start the Exchange Services.
