Not certain of any of these comments, but I'll make them anyway :) I think it was Paul B who said the 0.0.0.0 address meant the local host was listening for a remote host to connect to the socket spe

Probably the simplest way to secure Amanda sockets would be just to instruct xinetd to only accept connections from the local host. But if you want to modify Amanda to not use TCP/IP sockets at all,
