NetBackup 6.5 offers a VMware solution that allow you to do this - image level 
backup (using VMware VCB) and granular file level recovery in one backup pass.  
There is also a way to upgrade from 5.x directly to 6.5.

PS - Not sure if Linux is covered yet as a supported OS for this particular 
solution (one pass VCB backup with granular recovery).
