in the bp.conf add a line, similar to this:
keep_jobs_hours = 720
which equals 30 days. I my activity monitor set to this.

Morning.

Does anyone know where I can configure the Activity Monitor to show more
jobs in the window? Presently it seems to be showing 3 days worth of jobs
and then appears to overwrite any previous dates.

I am 90% sure this was able to be done on 3.4, but cannot find the file I
need to change. Running NBU 5.x Win2003
