you could try this, it will give you the amount of data backed up over a
specified time period, you can play about with the time field to get the
required results.

|grep "successfully wrote backup \
id" | nawk '{a+=$20} END { printf (a/1000000) " Gbytes\n"}'

Is there a command or an easy way to determine how much data is backed up
every night?

I remember looking at this information on a per client basis, but I have
been asked to provide the current data being backed up for all clients per
night.
