Has anybody any experience in virtualising their networker server? My
boss is giving it serious thought, however i'm not quite convinced. I
know the idea is to share the resources but at the end of the day you're
still sharing and the networker server is pretty demanding. Anybody any
thoughts/experience?

I would argue strenuously against virtualizing a backup server.

IF you can virtualize and still provide enough I/O bandwidth to perform
your backups and recoveries in a suitable window, I would be very
surprised. Let's assume for a minute you can, though.

Even if your virtualized backup server has enough I/O, though, you're
still potentially making a true disaster recovery situation much more
complicated, if not potentially impossible.
