Does anyone know of a white paper, or some other document, that would
help in setting up a Networker server with multiple NIC"s to increase
performance.

What are you looking to increase the performance of? Adding another NIC to a backup server may or may not shorten performance; it depends on the server hardware, network, and clients involved.

We already do some storage nodes, with fiber, but we still have a LOT of servers that go through the Gigabit network, and I would like to improve
performance by using 2 NIC's instead of 1.

Adding two NICs that pipe to the same network switch will not buy you much in performance increase and, depending on how your NetWorker server handles its TCP/IP stack, you may even see a net decline in backup throughput.

If your goal is to increase backup throughput to your tape drives or other backup devices, you need to start by looking at where the bottleneck is.
