As far as upgrading the clients to 7.2.2 also, until this can be
completed, should older versions of the client work OK with the 7.2.2
server as far as the backup mechanics are concerned?
It's been my experience, at least with older releases like NetWorker
6.x, that clients seem to work OK even when at older releases than the
server and even when at newer releases, but that was from a mechanics
point of view and had nothing to do with security.

Then 7.2.2 is probably the way to go. It's been at least as stable as
7.1.4 was for us.
27-Apr-2006 EMC Technical Alert for NetWorker - LGTOpa84882 (mentions
fix is included in 7.2.2, and patches are available for other
releases, but says nothing about 7.2.1)
That's why we went to 7.2.2. Note that you need to upgrade all your
clients too, since the (remotely exploitable) vulnerability is in
nsrexecd, which runs on your clients too (except NetWare clients).
