Have you been doing brick level backups or just the EDB backups....If you
are asking the questions, I assume you cannot.  The best thing I have come
across when trying to restore a single mailbox from a server, is to install
Win2k server and Exchange and networker client (including exchange module)
and restore the whole server (ds.edb and priv.edb at a minimum) to the
desktop and then connect with a client to export the mailbox.

One thing you could probably do (I have not tried it but I think it would
work) for future occurrences of the same problem is to either ghost the
desktop created above or use VMWAre to create a vmdx file of the exchange
server.

Of course, you could start doing brick level backups but I have difficulties
getting it to work and even when it does, it adds a lot to the backup time.
