Joe,

Theoretically speaking...
If you plan to do all of this from a single Exchange Server,
then you will have to have a separate Exchange "Mailbox" database
for each of your customers. For example:

ExchangeServer1
   - Storage Group 1
        - MailboxDB for Company 1
        - MailboxDB for Company 2
        - MailboxDB for Company 3
        - MailboxDB for Company 4
   - Storage Group 2
        - MailboxDB for Company 5
        - MailboxDB for Company 6
        - MailboxDB for Company 7
        - MailboxDB for Company 8
   - Storage Group 3
        - MailboxDB for Company 9
        - MailboxDB for Company 10
        - MailboxDB for Company 11
        - MailboxDB for Company 12

First, being the service provider, you will want
a single Data Protection for Exchange node to back up
the entire server for your disaster recovery purposes.
That node is for you.. and not for customers.

Then, you could have 12 more Data Protection for Exchange nodes,
(one for each company).. that you can then perform "DBCOPY" type
backups,
one for each customer's mailbox database.

As far as the restore for customers... they will only be able to see
their DBCOPY type backups... and you will need to provide them a
step by step process for restoring their DBCOPY type backup
to a server that they build at their site (see Microsoft documentation
for building an Exchange Server in a disaster recovery scenario.)
