Chris,
On Exchange 2000 Microsoft made it a little more
difficult to do this. Look here for more detailed info:
http://www.microsoft.com/technet/treeview/default.asp?url=/technet/prodtechnol/exchange/exchange2000/support/dbrecovr.asp
By the way, a new Microsoft document that describes quite
a bit about Exchange restore and related information written
by Jon Hoerlein and Chris Frediani can be found here:
http://www.microsoft.com/technet/treeview/default.asp?url=/technet/prodtechnol/exchange/exchange2000/proddocs/onlinebooks/disrec/default.asp
(sorry for the long URLs).
The paper is called:
"Disaster Recovery for Microsoft Exchange 2000 Server"
and it contains quite a bit of information as well
as a good lst of other references for more information
at the end of the document. Some of tohse are:
Exchange 2000 Server Database Recovery
(http://go.microsoft.com/fwlink/?LinkId=6273)
Mailbox Recovery for Microsoft Exchange 2000 Server
(http://go.microsoft.com/fwlink/?LinkId=5216)
Back up and Restoring Connectors on Microsoft Exchange 2000 Server
(http://go.microsoft.com/fwlink/?LinkId=6272)
Exchange 2000 Server Disaster Recovery: Worst-Case Survival Handbook
(http://go.microsoft.com/fwlink/?LinkId=6276)
Microsoft Exchange 5.5 Disaster Recovery

Thanks,
