But, doesn't the "Retain Extra Versions 30" mean that a file changed
daily ends up having 30 copies? If not, what
exactly does the retain extra versions mean?

Rob,
You are telling the system to only keep the two latest copies of files on
your system:
Versions Data Exists 2
I would also suggest that you keep more than a single copy of a deleted
file:
Versions Data Deleted 1
My experience has been that if a virus attacks a file the user will erase
the file, not bother to tell anyone until at least one backup cycle has
completed, and therefore the only copy you have on your system is the
contaminated copy. I usually keep at least three copies of deleted files
for x days.
