After running this over the holiday and watching it it looks like I was only 
getting about 10MB/sec to the drive. I had the policy set up so that the 
selection list was the drive where the files resided with no breakouts or 
multiple streams. Both the backup and client servers have 1000 Mbps nic's so I 
don't think the network is the issue. Also other backup jobs I run can get 
close to that 70MB/sec if I am multiplexing 7-12 servers in at a time.
