We just did this with a Win2K system due to it not completing a restore.
 
Do the bare bones Win2K install to a directory named c:\jumpstart (okay, so
I am a Sun guy).
 
Install the NB client and do the restore.  The restore won't overwrite any
files that are in use.  When you reboot after the restore, it is going to
come back up on your normal disk drive name/directory.

I would propose the the following.
 
Reinstall the server with OS (make sure you have the same service pack level
as the "old" server)
Install the Metaframe software and rename the drives
Install the Netbackup Client
use W2kOption.exe on the server
perform the restore.
 
 
I did this in a desaster case and it worked well

I'm backing up a Citrix server, configured with M and N drives.
 
M is the system drive (Normally C:) and N is data.
 
I'm having great difficulty doing a restore of the full system (M, N, and
System state.)
 
What we've been doing, is building a barebones system as if we were building
a new metaframe server.
Installing OS, renaming the drives to M and N from C and D.
Installing the netbackup client.
 
performing restore of M, N and System state, overwriting existing files.
 
In some cases, it has failed with status 5.....the machine loses network
connectivity during the restore......everything looks fine, but part way
through restoring, it dissappears of the network...go to the console and
can't ping anything but itself.....attempt to reboot, and it hangs at the
"starting windows" screen.
 
Sometimes it appears to complete the restore successfully, but then when you
try to reboot, it gets stuck in a boot loop.
 
Running out of ideas.
