Are you backing it up over the network with the Windows server as the
client?
Or are you backing it up over FC, right off the SAN?
Sounds to me like you're backing up the client over the net.....so the
Master server's connection to the SAN is irrelevant.

In your current situation, you've only got one stream....starts at C,
then does E.

If you turn on "allow multiple streams" you'll probably get one for C
and one for E.

You could try something like 

NEW_STREAM
C:\
NEW_STREAM
E:\<dir with lots of data>
NEW_STREAM
E:\<another dir with lots of data>
NEW_STREAM
E:\<another DIR with lots of data>

Or something like that.
