we use vnetd here and it works just great.

the java gui?
the java gui uses lots of ports and i dont think there is a way
to restrict port ranges (though i havent really looked for it).
i mostly use the command line tools now but when i use
the gui i use x-forwarding with compression through ssh and run
the gui directly on the server. works
quite well (although it is pretty slow if its not on the local lan).
what platform are you on?
you could probably use some software that creates and
encrypted tunnel.
