You'll have to have a schedule defined as a "user backup" type. This can be
another schedule of an established class/policy. Then on the client, you
run:
bpbackup -c <classname> -s <schedname> <dir-to-be-backed-up>
The "-s <schedname>" is optional if you only have one user-backup schedule
as part of the class. There's more options for logging, etc. See the "man"
page for more info.

Is there an easy way preferably from command line to just backup a directory
on a client to tape. I don't mind if its to a certain tape within a pool,
but was just wondering if there was any other way than setting a new
schedule up and doing a manual backup to back this one dir up, which is a
one off and completely different from my normal file list.

solaris 8
netbackup 3.2ga
sun L1000 tape storage unit
